Austin-based singer-songwriter Kaioti is KX FM’s Artist of the Week!

We asked the psychedelic songwriter to share with us a recipe he loves to cook, and he sent us instructions on how to make “Veggie Surprise.” 


Brussels Sprouts
Sweet Potato


A simple healthy choice sure to spice up those lonely nights.

  1. First you’re gonna get that water boiling.

  2. Once that baby hits boiling temp, you’re gonna dunk those sweet potatoes and leave them in for about 15-20 minutes.

  3. Check with a fork to make sure the insides of the sweet potatoes are soft but not falling apart.

  4. While you’ve got your sweet potatoes working, we’re gonna get our pan nice and hot, drizzle some olive oil, and throw in our chopped up shallots.

  5. Five minutes later, we’re gonna throw in our sprouts (they can take a while to cook).

  6. Fifteen minutes later, our sweet potatoes should be ready to take out. Cut them into cubes (skin on) and throw them into the pan with the sprouts.

  7. After another five minutes, throw in the kale a little salt and pepper.

  8. Five minutes after that, you’re ready to plate! Make it look nice, presentation is everything.
